Rice dishes are staple in all cuisines but cooked in different styles. When it comes to my choice I like chicken pulao it is even good to feed large gatherings. You can easily increase its amount from double to triple.

When it comes to the color of the rice then I like brown-colored chicken pulao and it depends on the color of the fried onions. If the color of the onions is light then cooked pulao is white in color but when the color of the onions changes to brown then brown chicken pulao is cooked.

It is one of the tasty dishes of Pakistan. Serve this chicken pulao with Dahi/yogurt ka raita and with salad. Try this tasty and delicious spicy chicken pulao recipe from this easy method. Chicken pulao is cooked in two ways as kala pulao and white pulao. If it is cooked with red pepper it is called kala pulao. If it is cooked with red chili powder it is called white pulao. Both are yummy and tasty But here I am sharing a recipe for kala pulao.

  • Hot 6 glass of water and add chicken (1/2 kg), (1 whole) washed garlic, (1 whole) onion in it.
  • Add cumin seed (1tsp), whole black pepper(1/2 tsp), fennel (1tsp), cinnamon (2 sticks) in it.
  • Add black cardamom (1), green chili (2) and salt (1tsp) on high flame and cover it.
  • Cook it until the chicken become tender.
  • When the chicken becomes soft to like to eat, the stock is ready for chicken pulao.
  • Put a deep and wide pan on flame for pulao.
  • Add sliced onions and (5 tbs) oil in it.
  • Fry onions until golden with (1 tsp) fennel.
  • Now add a very little water and cover the pan for 2 mins.
  • Open the pan and add boiled chicken with (1-1/2 tsp) salt and (3/4 tsp) black pepper powder.
  • Add the past of (1) large tomato,(1/2 tsp) garlic paste, (1/2 tsp) ginger past in it and saute.
  • After a few minutes, spicy chicken gravy is ready for adding the rice.
  • Now the oil appears, add stock (4 glass) in it and cook for a boil.
  • When it boils, add soaked rice(2 glass), mix well and cover the pan on high flame.
  • After 2 minutes, mix the rice again and cover the pan and cook.
  • After a few seconds, the water becomes dry and appear the wholes on the surface.
  • Now, simmer the rice on very low flame, and off the flame for 3 minutes.
  • Now open the pan, the tasty and spicy chicken pulao is ready to serve.
