It is a traditional dish and is prepared by different methods. This sweet dish gets its name from the word carrot which is termed as gajar in Urdu. this is an authentic recipe of gajrela. To add more aroma to this sweet dish recipe cardamom powder is added in it. It can also be prepared with condensed milk and khoya rather than whole milk. Roasted nuts are used for garnishing to enhance their nutritional benefits as well as flavor.

  • Wash carrots with plane water until all dirt removes
  • Peel all the carrots.
  • Then grate them either manually or with a food processor.
  • Take one kg of milk in heavy bottom pot and let in boil.
  • Then add grated carrots in it and cook on medium flame until milk evaporates.
  • Stir time to time so it does not stick to the bottom of pot.
  • When all milk evaporates then add 4 tbsp of sugar in it.
  • Sugar melts then mix well.
  • when the sugar syrup dries out then add 4 tbsp of desi ghee in it and mix well.
  • Then add 1tsp of cardamom powder and mix well.
  • Take one tbsp of ghee in a separate pan and roast 8-10 almonds,8-10 pistachios, and 8-10 cashews.
  • Let them cool and crush them with a knife
  • Dish out gajrela in a dish and garnish it with roasted nuts.
