This is a delicious recipe for ice cream cake. This Eid makes this cake and makes everyone surprised. Ice cream cake is easy to make it needs simple ingredients to make ice cream cake. Cakes can be made in a variety of ways. I have already shared some recipes for cakes but this is different from all the other recipes. This recipe is liked by everyone especially those who are ice cream lovers because it is a combination of cake sponge and ice cream

Ingredients for making ice cream cake

Ice cream:

You can use any ice cream of your choice but I prefer using chocolate and vanilla ice cream.

Dark Chocolate:

Chocolate ganache/ chocolate syrup is made with dark chocolate.

Eggs:

Eggs are the main ingredient in every cake recipe. To make a sponge of cake egg is compulsory.

All-purpose flour:

It is also the base ingredient of making cake sponges.

Baking powder:

Baking powder is necessary to add baking powder while baking cakes.

Dairy cream:

It is an ingredient in making chocolate ganache/ chocolate syrup.

Vanilla essence:

Few drops of essence are added for taste.

Sprinkles, chocolate chips:

These are garnishing ingredients.

Tips and Tricks:

Eggs are at room temperature otherwise the cake sponge becomes hard.

After adding all-purpose flour while making batter do not beat instead mix with a spatula.

Freeze the cake sponge after wrapping it in cling foil so moisture retains.

Use preheat oven for baking.

Check with a toothpick or skewer whether the cake is caked completely or not.

  • Prepare chocolate ganache

  • In a bowl add eggs , caster sugar and beat well.
  • In a small separate bowl add mil, cooking oil and cocoa powder and whisk well.
  • Add this cocoa mixture to the egg mixture and combine and beat well.
  • Add all purpose flour, baking powder, salt and mix with the help of spatula.
  • Add vanilla essence and mix.
  • Transfer it to 8 inch greased pan and tap few times soo all the air bubbles remove.
  • Bake in a preheated oven at 170C for 25-30 min or until skewer comes out clean.
  • Take out from the oven and rest for 10 minutes.
  • Remove cake from baking pan and wrap in aluminum foil to lock moisture and freeze for 3-4 hours.
  • Prepare chocolate ganache
  • In a jug add dark chocolate and dairy cream microwave it for 1 minute and set aside.
  • Prepare ice cream layer
  • Line pan with aluminum foil.
  • Place ice cream with ice cream scoop and level it then cover with cling foil and place in freezer for 4 hours.
  • take out from freezer remove the cling foil and pour chocolate ganache layer over ice cream layer.
  • Take out cake from freezer, Remove cling film from cake and place cake over the ice cream layer ,cover with cling film and freeze for 8 hours or overnight in freezer.
  • Remove cling film and invert the cake on cake stand and remove aluminum foil from it.
  • Apply whipped cream all over the cake and spread evenly.
  • Decorate with chocolate ganache, sprinkles and freeze again and serve chilled.
